Ingredients to prepare Khandvi
Gram flour – 100 grams
Curd – 1 cup
Green Chilli chopped – 2
Turmeric – 1/4 teaspoon
Ginger paste – 1/2 teaspoon
Grated raw coconut – 1 tablespoon
Chopped coriander leaves – 1 tablespoon
Curry leaves – 4-5
Oil – 1 tablespoon
Salt – As per taste
Directions to cook khandvi at home
- To make Gujarati style Khandvi, first take curd and beat it well. After this, filter the gram flour and take it out in a vessel.
- Now add curd to the gram flour and mix both of them well. After this, add 2 cups of water, ginger paste, turmeric and salt as per taste to the gram flour solution and mix everything well.
- Now place a pan on the gas on medium flame, pour the prepared gram flour solution in it and keep stirring it with the help of a ladle.
- When the gram flour solution starts thickening, reduce the flame of the gas. After this, let the solution cook on low flame for 9-10 minutes.
- During this time, keep stirring the mixture continuously. By now the Khandvi solution would have thickened well.
- Now take a tray and spread the Khandvi solution in it thinly. If the mixture is more, then the number of trays can be increased.
- After this, keep the tray aside for 10 minutes. In this time, the solution will cool down and solidify.
- Now cut the frozen layer into 2 inch wide and 6 inch long strips with the help of a knife.
- After this, make these strips round and prepare rolls.
- Now heat oil in a pan and add mustard seeds, curry leaves and green chillies and fry all three well.
- After this, pour this mustard Tadka on all the khandvi one by one with the help of a spoon.
